CHICKEN AND RICE

I don't know the name of this recipe but it is one of our favorites because of how easy and yummy it is. My kids really love it!

Chicken breasts (however many you want to use)
1 can cream of mushroom soup
1 can cream of chicken soup
1 can water
2 cups rice (I've always used minute rice. I don't know if it works with long grain rice)
1 package lipton onion soup mix.

Put together and bake at 325 covered for 2 hours.

Okay, I was going to write a review on this recipe, but realized that I FORGOT the Liption Onion mix!! DUH! It was good anyway.

I will review it anyway. It was pretty good. I have made a similar recipe (it didn't call for the soup mix that is probably why I forgot). Anyway, I didn't have minute rice so I did long grain rice. And I only used 2 pieces of chicken. After about 45 minutes it was totally dried out and the rice was not cooked. So, I added about 2 cups of hot water, mixed and returned to oven. About 15 minutes later water was gone again and rice needed more cooking. So, I added another cup or so. That seemed to do the trick. BUT, my chicken and rice were both dry.

The moral of the story. First, read all the ingredients :). Second, use more chicken or decrease the cooking time. Third, if you use regular rice (which I think would still be fine) use more like 4-5 cans of water and it should be good to go.
